Drink Your Vegetables

Green smoothies are quick to make and add to your five a day- Credit Stacy Spensley FlickrOne of the easiest ways I find to up your vegetable intake is by incorporating them in to smoothies that you can drink on the go. I find my own kids love smoothies and they often don’t realise they are getting some of their five a day as they drink them!

Once you start to make smoothies at home you will be amazed by the different vegetables and fruits you can pick straight from the garden and use in them. Everything from kale, spinach, beetroot, carrots and summer berries can be used in smoothies. And if you want to be very trendy you can put your smoothie in a bowl, sprinkle come berries and granola over it and have a very hipster smoothie bowl.

Below is a quick recipe for a basic green smoothie to try out. You can alter it to your own taste by adding berries or other vegetables to the mix. Blackberries make a great addition to recipe I find.

Ingredients:

  • 1/2 Banana
  • 3/4 cup milk/ soya milk
  • 2 large handfuls of spinach
  • 1/4 cup porridge oats
  • 1tbsp chia seeds or flaxseed (optional)

Method:
Place all the ingredients in a blender and blend until smooth.
Serve in glass over ice. 
& enjoy!

I have been gardening since I was 5 years old when my mother gave me a part of our garden as my own. I have studied horticulture in the National Botanical Gardens in Glasnevin and was a winner in the young horticulturist of the year competition. I have worked in Several plant nurseries and garden centers such as Mount Congreve in Co. Waterford. My special interests are plant propagation and Cacti!
